
We love berries and have been getting flats of blueberries for the past few weeks and eating them on and in everything. We toss them on our cereal, in yogurt and I have made tons of blueberry muffins to share with friends and family.
But today I made freezer jam….it is so easy. I have a dozen jars of beautiful, fresh marion berry jam in my freezer and I am anxious to stock up on more canning jars so I can make some more. I have never canned anything in my life, so this was a tad bit intimidating. If I would have known how easy it was, I would have done it years ago.
I have always been a city girl and a working woman, so there has never been time in my schedule for canning and preserving food. Now I am busy searching for more recipes so I can use all the berries I have froze this year. The plan is to make more marion berry jam as it is absolutely delicious. Then strawberry-banana jam and pomegranate jelly. If you have any ideas or easy recipes for this novice, please leave them in the comments section as I am open to new ideas.
Berries are full of antioxidants (to keep cancer away) so we will save lots of our frozen berries to enjoy this winter too. And the farmer's market is still open for weeks to come...so you never know what new ideas I may come up with. My hubby keeps asking "who are you and what have you done with my wife?" Move over Martha, here I come...next I am going to tackle making a homemade blueberry pie!!
